Lemon Gelato
Lemon gelato is creamy, tangy and sweet. Perfect for a light after dinner treat.
INGREDIENTS:
- 1 cup milk (full fat)
- 1 cup sugar
- 5 egg yolks, beaten
- ¾ cup lemon juice (about 3 to 4 lemons)
- 3 tablespoons lemon zest (zest lemons before juicing)
- 2 cups heavy whipping cream
INSTRUCTIONS:
- In a medium-sized saucepan, heat milk to 175°, whisk in sugar until completely dissolved. Add a small amount of the hot mixture into the egg yolks. Whisking constantly; add the rest of the yolks. Add lemon zest. Keep whisking and cook over a low heat until thermometer reads 160° and mixture is just thick enough to coat a metal spoon. Do not boil.
- Remove saucepan from heat; stir in lemon juice and cream. Place in a bowl. Cover tightly with plastic wrap and refrigerate until cold; for best results chill overnight.
- In assembled KitchenAid stand turn to stir speed one. Pour mixture into freeze bowl. Continue on Speed 1 for 15 to 20 minutes or until desired consistency is reached. Immediately transfer ice cream into serving dishes, or freeze in an airtight container.

DeleteAfter close to 7 years, my first comment. I proof read most of the Spoon's post, do much of the meat and fish grilling, and get to taste everything. This gelato is one of the best things she has ever made. It is that good. I can't wait to try whatever she is going to make with our grapefruits, which are just about perfect right now!
