Homemade Vanilla Bean Ice Cream
Homemade Vanilla Bean Ice Cream |
Now one thing that I do love to do when it’s crazy cold outside is to eat ice cream and that might seem strange to some. And maybe even stranger to some for me to make and then post about it. But in full disclosure I did buy myself an ice cream maker for Christmas. So it’s all perfect timing:) Maybe there are others out there that do the same when purchasing holiday gifts, two for him and then one for me, you know those kind of gifts. The kind that get us through the holidays. Anyway now that I have finished my very first batch I am so glad I did. Homemade ice cream is the best!!
Since I have an Kitchen Aid stand I decided to purchase the ice cream attachment. Not ready to make judgment on this gadget yet, want to try a few more variations. Next on my list will be a grapefruit or lemon sorbet as both of our citrus trees are having a banner year.

Homemade Vanilla Bean Ice Cream
INGREDIENTS:
- 2 1/2 cups half-and-half
- 8 egg yolks
- 1 cup sugar
- 2 1/2 cups whipping cream
- 1 teaspoon vanilla extract
- 1 large vanilla bean, cut open lengthwise and scraped with a sharp knife
- 1/8 teaspoon salt
INSTRUCTIONS:
- In medium saucepan over medium heat, heat half-and-half until very hot but not boiling, stirring often. Remove from heat; set aside.
- Place egg yolks and sugar into the Stand Mixer bowl. Attach bowl and wire whip to mixer. Turn to Speed 2 and mix about 30 seconds, or until well blended and slightly thickened.
- Still on Speed 2, gradually add half-and-half; mix until blended. Return liquid mixture to medium-sized saucepan; cook over medium heat until mixture is steamy and almost boiling, stirring constantly.
- Transfer half-and-half mixture into large bowl; stir in whipping cream, vanilla extract, seeds and salt. Cover and chill thoroughly, overnight if possible.
- In assembled Kitchen aide stand turn to stir speed one. Pour mixture into freeze bowl. Continue on Speed 1 for 15 to 20 minutes or until desired consistency is reached. Immediately transfer ice cream into serving dishes, or freeze in an airtight container.

I am the same way! I eat ice cream all year but I think more so in the winter. Vanilla is my favorite! Have fun with your new machine!
ReplyDeleteThanks Reeni, vanilla is my favorite too.
DeleteVanilla bean ice cream is my favourite; especially homemade. It's definitely ice cream season in my part of the world - so hot! This looks very cooling and refreshing xx
ReplyDeleteThanks Charlie, thats right it is summer in Australia, hope this helps.
DeleteThere are different habits all over the globe and people from northern parts have taught me to have the ice cream when it's freezing out and mild tea during the heat wave. If true, you are doing the best possible thing :-) And yes, vanilla is one of favourite ....
ReplyDeleteThats funny I like to drink hot tea when it's hot out too, thanks for stopping by.
DeleteTurn the heater on and enjoy some cool creaminess! Your ice cream looks great, Cheri.
ReplyDeleteLOl, yes thats the plan, thanks Angie!
DeleteYou're so great Cheri. I love your spirit of fun. The ice cream looks divine. D
ReplyDeleteThanks Dena, fruit is my favorite way to top this but we also have a fudge and a caramel sauce version too.
DeleteYum, nothing beats vanilla beans for flavor!
ReplyDeleteThanks Chris, my favorite too!
DeleteWhat a great gift you bought for yourself, Cheri! It's been so cold here this past week but have we eaten ice cream - yes! There is nothing like a good vanilla ice cream to top a piece of pie or pile with beautiful fruit like you did.
ReplyDeleteThanks Susan. you are so right, now if only I could bake pies like you;)
DeleteIt's not crazy at all, Cheri! Ice cream - like chocolate - should have no season. I had one winter where I was making a ton of ice cream, too. I say just go with your cravings. : ) Hope you had a wonderful holiday. Happy New Year and hope it's a great one!
ReplyDeleteThanks Monica, yes you are right, chocolate and ice cream are perfect any time of day and any time of year:)
DeleteWell, it may be around 13 degrees today, wind whipping, chilling to the bone, still, why not ice cream? Looks delicious to me, and a lot more desirable than One. More. Smoothie. Love the fruit too. Sorry to the fish guy too.
ReplyDeletewow, 13 degrees sounds pretty chilly to me. I don't think I've ever been in temps that cold. take care Peggyxo
DeleteI'd take a scoop on a slice of pie, but I'm too cold blooded to eat just a bowl of ice cream in January. But come summer, I'm definitely game!!!
ReplyDeletelol, totally understand Liz, take care.
DeleteWhat a fun gift you bought yourself, Cheri! I love my gadgets too, but I don't have an ice cream maker...hmmmm. Your ice cream looks delicious and vanilla bean ice cream can go with so many things, but I think it's the best with chocolate cake :)
ReplyDeleteThanks Marcelle, I keep saying there is no more room for any more gadgets and then I buy another thing.
DeleteYou will not regret your purchase at all. Mine lives in the freezer. The poor guy, it's not his fault the weather was not good enough for fishing.
ReplyDeleteThanks Tandy, already thinking about my next batch;)
DeleteI love home made ice cream. Yours looks delicious. I have enjoyed my ice cream maker for years. Have fun finding new and delicious recipes .
ReplyDeleteThanks Gerlinde, thinking I will make a sorbet next.
DeleteSimilar troubles brew in Japan regarding fish...Very sad...But ice cream in any season makes me happy. Nice to know there's an attachment for ice cream making on the KitchenAid!
ReplyDeleteThanks Kim, it seems like the kitchenaid can do almost anything;)
DeleteI am anxious to hear your option on the attachment. I have a Cuisinart Ice Cream maker that I love and I'm with you - ice cream is great anytime - weather or not it's hot outside! Poor fish guy :(
ReplyDeleteThanks Tricia, making a lemon gelato tomorrow, have the "ingredients" already cooling. Then next I want to try a sorbet and a frozen yogurt, will let you know when I finished my little tests;)
Deletevanilla bean ice cream is my favorite to eat plain or with pie or cake and the like--nice choice! i'm jealous of your christmas purchase--i've been after an ice cream maker for years, but no one will get the hint. i suppose i might have to take a cue from you and buy one myself!
ReplyDeleteHi Grace, I've been married for decades and some times a gal has to do what she has to do;)
DeleteSounds like smart Christmas gifts!! We got an ice cream maker last year for Christmas, and used it non-stop til taking our first break a month ago. It's all so good! I must confess though, we haven't tried an egg based ice cream yet.
ReplyDeleteThanks Kris, I never knew there were so many different methods, makes it even more interesting and delicious.
DeleteMy husband could eat ice cream any time, day or night. Me, not so much! But when I do I love home made ice cream. My son is the one that commands the machine, so unfortunately we haven't had any lately! But this looks so good!
ReplyDeleteThanks Abbe, I completely understand, I always seem to need a little help getting some of these gadgets together.
DeleteCheri....you and I are kindred spirits cuz there are two things I eat all year long no matter what the season.....soup & ice cream! I love a simple vanilla bean ice cream. So many things to top it with. Have fun with your new ice cream maker. I love that stage when the ice cream is done but you haven't put it in the freezer yet....just like soft serve! Going to look at your chicken and rice soup now!
ReplyDeleteThanks Anne, that is too funny. Yes I could live on soup, ice cream and salad. Just made some lemon gelato today, so much fun. Take care.
DeleteWaouh, your ice cream looks delightful! I have to buy an ice cream maker in 2017:) Happy New Year Cheri!

Thanks Zaza, I'm having lots of fun with mine, so glad I finally bought one.
DeleteI actually laughed out loud, Cheri, when I read that you like to eat ice cream when it's cold out! Mark will only eat ice cream for about two weeks a year when it's absolutely at its hottest in Tucson! I'm not sure if he ever touched it when we lived in New England. I'm anxious to see what you think of the attachment – I have the Cuisinart version and it's just OK.
ReplyDeleteHi David, I know, kind of crazy, just made lemon gelato today, well you know it's still winter here, my favorite yet.
DeleteLocally a new ice cream shop opened up in November! So I know ice cream is a year round treat! Vanilla bean is a fabulous flavor. It stands alone and also makes friends so so many other companions!
ReplyDeleteHi deb, you are so right, so many more options with vanilla.

DeleteI had so much fun making ice creams last fall. Overdid it a little (not to mention those holiday lbs) so am taking a break right now. But I didn't like the vanilla recipe I tried so am on the lookout for a new one. Thanks for sharing!
ReplyDeleteThanks Inger, I know what you mean I am trying to eat at least one salad a day.
